What's Cookin'?

We recently posted an image on our Instagram featuring some delicious dishes, alongside one of our Fog Linen dish towels that we carry.  So many of you asked for the recipe, so here it is!  We have Real Simple Magazine to thank for all the goodness, it was featured in their July 2018 issue!

Cucumber & Melon Salad

1 small shallot, chopped finely

5 Tbsp. Champagne or white wine vinegar (We used our own champagne vinegar, infused with chive blooms from our garden!)

1 - 3lb cantaloupe, peeled and chopped

1 english cucumber, sliced

6 oz of feta cheese (about 1 1/2 cups)

1/2 loaf ciabatta, sliced

7 Tbsp olive oil

1 1/2 tsp sea salt

1/2 cup loosely packed basil leaves (ours came from the garden!)

1/2 cup roughly chopped toasted almonds (We used walnuts, because they were on hand!)

Freshly ground black pepper.

1. Mix together the shallots and vinegar.  Set aside to drizzle later on.

2. Arrange the cantaloupe and cucumber on a large platter and set that aside (We recommend using our DBO Home platter, shown below!).

3. Meanwhile, heat a cast iron grill pan and brush both side of the ciabatta with olive oil.  Grill until charred on both sides (We also rubbed fresh garlic on both sides for some extra delish!).

4.Whisk 1 tsp salt and the remaining olive oil into the shallot mixture & drizzle over the salad.  Top with the basil, walnuts pepper (to your taste) & sea salt.  Serve with the ciabatta!

5.Enjoy!
